Edinburgh was the place to go for New Year 2015/2016. The city has it all. Castles, palaces, extinct volcanoes, royal gardens and underground vaults. But we mainly went because Edinburgh is the home of Hogmanay, Scotland’s famous New Year Festival. Full of history and with the most magical surroundings, it’s easy to see how JK Rowling was inspired to write her Harry Potter books here.
2015 marks my first Winter Christmas… and it’s been amazing! The Northern Hemisphere does Christmas well. There are fairy lights everywhere, christmas carols, christmas jumpers, ice skating rinks, winter wonderland and lets not forget christmas markets! Last weekend me and my friends went to Brugge for their Christmas Markets and it did not disappoint.
First stop on our OE – Seminyak, Bali! Seminyak is one of the main tourist hubs in Bali. It is full of ex-pats (Australian’s mainly). In amongst the windy roads which are full of construction, are high-end boutiques, plenty of luxurious spas and resorts, clubs and last but not least restaurants. For Christmas this year Hamish and I hopped on a 25 minute plane ride to Nelson and spent four beautiful sun drenched days down there. Nelson is a vibrant city near the top of the south island. It is surrounded by rolling hills and coastal landscapes and is the home to many orchards, wineries and boutique breweries.

Last weekend Leigh and I went to Taupo to visit our friend Krystie and her baby, Tayla. When I first met Tayla she was 6 weeks old. Now she is 6 months old. I’ve heard that babies change drastically in a short time, so I was excited to see the wee one again.

I can’t rave about this recipe enough! If you are after a hearty winters meal that is super easy, then this is the dish. Place your ingredients in the slow cooker, leave it to cook while you’re at work and then you will return home to the most delicious smell. When you are ready to eat, cook pasta and serve. Simple as that.
