Vietnamese food is one of the healthiest cuisines in the world, and they get this reputation from the use of all the fresh ingredients and their minimal use of oil. This recipe will transport you straight to Vietnam. It is super delicious and also very healthy; it is jam packed with lots of fresh herbs and the pork is cooked in coconut water.
Succulent slow cooked pork, fresh coriander and mint, a sprinkle of peanuts, served on a bed of rice noodles with a sweet and salty coleslaw, who could want more.

New Years on Waiheke

This New Year me and my friends headed to Waiheke Island for a week. We hired a lovely house and embarked on a holiday filled with plenty of sun, beach, wine and laughs.

Waiheke Island is situated in the Hauraki Gulf and is about 18km or an hours ferry ride from Auckland.
The house we hired was in an area called Onetangi, which has a beautiful beach but is quite far away from the main centre of the island, Oneroa, where all the shops, cafes and supermarkets are located. Since the island is too large to navigate on foot we took two cars over to help transport us around. This is my all time favourite slice. I’ve loved it since high school. Back then I would regularly purchase a piece from the tuck shop if I could rake together enough coinage. O ur annual Girls Christmas Dinner Party is the highlight of the social calendar. It started a few years ago, and each year it gets better. There has been Mexican, Magical, and Asian Christmases and this year was Under the Sea.

Roast Cauliflower with Almond Sauce

This recipe is amazing! If you are a fan of cauliflower cheese, you will go crazy for this amped up healthy alternative. I first tried this at my friend Emma’s house and I demanded the recipe off her (I even hounded her on Facebook when she hadn’t sent it to me within a few days). Charley Noble has a similar dish at their restaurant, and this is where Emma first got her inspiration to make this at home.

Instead of a fatty cheese sauce, you serve the cauliflower with an almond sauce. Now don’t get me wrong, I love cheese, but this is so creamy and full of flavour that I know you will agree that it is better! Not only is the sauce delicious, but it is healthy too! Great for people who are lactose intolerant 🙂
