Christchurch Getaway

At the beginning of the month I visited Christchurch. Here are a few pictures of my weekend away.  I haven’t been down to Christchurch for a few years so it was really great to see all the rebuilding that has taken place since the 2011 earthquakes.

There were still road cones lining the streets, and a lot of buildings still being demolished, but in amongst the destruction there was a lot of beauty. There were large murals on the side of buildings, where perhaps old buildings had once stood and new Regent St was picture perfect with pastel shops on either side of the path where the tram was running. Two blog posts in a row for salmon… You must be thinking I am obsessed, but this was way too delicious not to post straight away. This noodle salad is a healthy summer dish full of crunchy vegetables. It is a great mid week meal when you’re feeling lazy and you’ve got no time to cook. The only cooking involved is of the noodles which takes around 4 minutes. Roasted sticky chilli salmon is a dish full of Asian flavours that makes for a delicious evening meal. The original recipe comes from the Mind Food magazine. My friend Lucy made this for me one night and I absolutely loved it, so I chose to cook this for my Mum on her birthday. For a Summery meal you could serve the salmon topped with steamed, slivered asparagus and accompanied by a salad. Stir-fried asian greens and steamed rice turns this meal into a more substantial dinner. The recipe uses a side of salmon, but you can adapt it to however many people you are cooking for. I served individual salmon pieces to feed four. You can also half the quantities of the marinade if you are feeding less. Read More
